Rolo chocolate cookies.



What You'll Need



  • 2 1/2 cups flour
  • 3/4 cups unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 cup unsalted butter
  • 2 eggs
  • 1 tbsp vanilla extract
  • 1 tsp baking soda
  • 30-40 Rolo candies
  • 1 cup sprinkles or sugar (for rolling the cookies)

How to Make It

  1. In a mixing bowl, add granulated sugar, brown sugar and butter.
  2. Cream everything until the mixture is light and fluffy.
  3. Add eggs and vanilla extract.
  4. Mix again.
  5. In a separate bowl, add flour, cocoa powder and baking soda.
  6. Mix everything with a wooden spoon.
  7. Add the dry mixture into the wet mixture.
  8. Mix until just combined.
  9. Tip:
  10. Be careful not to over-mix or else you will end up with hard cookies.
  11. Chill the dough for 45 minutes so that it’s easier to handle.
  12. Scoop out about 1 tablespoon of the dough and mold it around a Rolo candy into the shape of a ball.
  13. Roll the ball in a bowl of sprinkles or sugar and press gently to flatten it a little.
  14. Place these cookies on a cookie tray lined with parchment paper.
  15. Bake at 375 degrees for 8-10 minutes.
